This morning I woke up, opened all of the windows and whipped up a batch of this amazing Pumpkin Spice coffee syrup! I can’t even begin to tell you how much I love this time of the year. The crisp air, the leaves changing color, sweaters, dark nail polish and pumpkin everything. Don’t get me wrong, I do love summer time but there is something about the fall that puts me in the best mood.
Now let’s talk about this syrup! It tastes just like pumpkin pie and unlike most pumpkin syrups you’ll find, this one only has 5 ingredients. Chances are you might even have them in your pantry. Score! My favorite way to use it is obviously in my hot coffee in the morning but it also tastes amazing mixed with some sweetened condensed milk and added to iced coffee, in a milkshake or on top of pancakes. I seriously can’t get enough of it!
DIY Pumpkin Spice Coffee Syrup
- 1 1/2 cups water
- 1 1/2 cups of sugar
- 1 cup pure pumpkin puree
- 3/4 tsp pumpkin spice seasoning
- 1 teapsoon vanilla extract
Combine water and sugar in a medium sauce pan and heat over medium-high heat until sugar dissolves. Bring to a slight boil and add pumpkin, pumpkin spice and vanilla. Whisk until all ingredients are combined and continue to cook for about 5 minutes. The mixture will be pretty thick (don’ t worry- it should be!). Let it come to room temperature and transfer into a jar or container of your choice. Keep refrigerated and an mix well before you use it. The spices will settle a little bit and if you are bothered by that you can always strain the syrup through a cheesecloth before you put it in the fridge!
When I make my hot coffee I normally use about 2-3 tablespoons of syrup with a little half and half- it tastes amazing! Add a little whipped cream and cinnamon on top and you’ll never get a coffee shop Pumpkin Spice Latte again!
